Cut: Bottom (tip) of Sirloin
Preferred Cooking Method: Second City Prime's preferred cooking method for the Prime Tri-Tip is... indirect grilling! The grill temperature should be set to 400 degrees fahrenheit. Indirect grilling is a better way of cooking thicker cut meats while preserving all the natural juices. First step is to turn on two out of the three burners on your grill. The middle burner should be the one turned off and your grill should be heated to 400 degrees fahrenheit. You will then place your meat on the middle burner while it's off and cover it with the lid. Finally, just wait and enjoy! To meet your desired doneness, we recommend using a meat thermometer to keep an eye on the internal temperature of your meat.
Preferred Cooking Time: The Prime Tri-Tip should be indirectly flipped every 6-7 minutes until it reaches an internal temperature of 120 degrees fahrenheit. Then you are going to want to place it on direct heat for 2-3 minutes on each side. Let it rest for 10 minutes before cutting.
Wine Pairing: Syrah
- Cut: Tri-Tip
- Grade: Prime
- Weight: Variable
